OUR HEAD CHEF


Adam Woolven began his career in Lancaster London's prestigious apprentice scheme. His career has gone from strength to strength in the past years. He was promoted to Sous Chef in 2013, before recently being given the role of Head Chef. Adam's new role includes writing new à la carte and set menus, organizing the day-to-day running of the kitchen and maintaining the restaurant's 2 AA rosettes, 3-star SRA rating and impressive position on TripAdvisor.

ALDEN’S


Alden’s is a family run business that has been supplying the British hospitality industry for over 15 years. They will only deliver up to 100 miles from their Oxford premises – which shows their commitment to food mile reduction. They are also proud holders of The Red Tractor logo which is a testament to their endeavours towards food safety and hygiene, animal welfare, traceability and environmental protection.

CHAPMAN’S


Our fish comes from our trusted supplier, Chapman’s. They are based in Sevenoaks, Kent and have strong local partnerships with local day boat fishermen. These fishermen are part of the “responsible fishing scheme” which has been developed to raise standards in the ethical and sustainable catching of seafood. They have made a commitment to the responsible sourcing of seafood – and we wouldn’t have it any other way.

WATTS FARM


Watts Farm is one of our great suppliers and they deliver our fruit and vegetables to our door. They have over 600 hectares of farmland in Kent, Essex and Bedfordshire. They are a family run business and we like them because, like us, they believe in quality, seasonal, local and fresh. They have a special interest in growing chilies and are now the UK’s largest supplier of chilies!

LANCASTER HONEY


We have thousands of bees living happily in our ten bee hives on the second floor roof. Our bees work hard throughout the summer, making honey from the plants and trees in Hyde Park (just next door). As the Hyde Park has lots of Lime Trees, the honey tastes very citrusy. We use this honey in the Granola at breakfast in Island Grill, but also in our Lancaster London Honey Pannacotta.
